Happy weekend! Butterscotch muffins anyone, anyone?

Happy weekend everyone! Go on, give it a go, recipe below…

Delicious scrumptious muffins ready eat

This recipe came to me a few years ago from my friend Sandy so I can’t really take much credit for it (but I will) and, quite frankly, it is a little bit of a miracle. You can make it with butter, margarine or olive oil… and it still works. Half the time I don’t even measure the oil. I just put in a couple of glugs and go ‘yep, that’s enough, that looks like 125g butter’s worth’. Truly.

You can cook it as a cake or as muffins. Either comes out with the top a chewy butterscotch-tasting delight, but the muffins moreso. And you don’t just want to eat the top because the rest of the deal is softer but equally delicious.

It’s a great muffin for picnics and any kind of packed lunch because there is no icing to get all over everything.  And really, I think we are all past the stage of licking the icing off the plastic aren’t we? <nods sagely as nose grows longer>

You’ll need these things:

  • 1 cup brown sugar
  • 1½ cups SR flour
  • ½ cup milk
  • 1 teaspoon cinnamon
  • I teaspoon vanilla essence
  • ½ teaspoon salt
  • 2 tablespoon golden syrup
  • 2 eggs
  • 125 gm butter


  1. Mix top 8 ingredients
  2. Melt butter and pour into mix, blend well
  3. Pour into ring tin (greased & floured if needed) OR into 12 muffin papers
  4. Bake for 30-35 minutes at 180ºC

    I made them! Spectacular, and v easy to put together. I added one mashed banana because it was there and if I didn’t use it I’d have to toss it.
